Crockpot Chicken Curry

Ingredients:

  • 6 - Boneless Skinless Chicken Thighs

  • 1 cup - Onion

  • 1 cup - Potato

  • 1 cup - Coconut Milk, light

  • 5 tbsp- Curry Paste

     

     

     

     

     

     

     

     

     

 

Directions:

  1. Chop onion and potato

  2. Lay down chicken, top with veggies and curry paste

  3. Add 1 cup of water

  4. Cook on low for 8 hours, or high for 4 hours

  5. Add coconut milk, let simmer for 10 minutes

  6. Optionally, add Cilantro as a garnish and enjoy!
